S’mores Cookies

Crispy graham crackers, toasted marshmallows on top and sweet chocolate, these cookies will make you feel like you’re infront of a warm campfire on a cold winter’s day.

Well, it looks like we are going to have another cold week and with the Canadian Family Day coming up, I thought this would be a perfect recipe to share.  This recipe is great for kids to help out with.  They can stir in the chocolate chips once the dough is complete, top the cookie dough with the marshmallows and graham cracker pieces, and make their own cookies to their liking.  So, if you have a little one that enjoys baking, or just likes to help out like my little guy does, this is an awesome recipe to make as a family.

The first recipe of the original S’mores was published back in 1927 in Tramping and Trailing with the Girl Scouts.  Though the Girl Scouts were not the first to make s’mores and the name came from the contraction of the phrase “some more” because this traditional treat is that good, you will want some more. I made these delicious cookies last week.  The smell of sweet toasted marshmallows and honey graham crackers filled the house while the cookies were baking in the oven.  So warm up to some freshly baked cookies and have s’mores 🙂

S'mores Cookies

  • Servings: makes 1 1/2 dozen cookies

Ingredients 

1/2 cup unsalted butter room temperature

1/2 cup brown sugar

1/2 cup white sugar

1 large egg

1 tsp vanilla

1 cup cake flour

3/4 cup bread flour

1/2 tsp baking soda

1/2 tsp baking powder

pinch of salt

1 cup semi sweet chocolate chips

4 graham crackers, broken into small pieces

1/2 cup mini marshmallows, cut in half

Instructions

1) Mix both flours, baking soda, baking powder and salt in a large bowl, set aside.

2) Using a stand mixer with paddle attachment, cream butter and sugars, add egg and vanilla, mix well.

3) Add flour mixture, mix until combined.

4) Stir in chocolate chips.

5) Line a large cookie sheet with wax or parchment paper and drop rounded cookie dough using a medium cookie scoop or a heaping tablespoon.

6) Press in 3 or 4 pieces of graham cracker and 3 or 4 pieces of marshmallows (use sticky end to attach)

7) Cover with plastic wrap and chill for 1-2 hours.

8) When ready to bake, preheat oven to 350°F.

9) Line cookie sheet with parchment and place 12 cookie doughs 2 inches apart and bake for 10 minutes or until edges are lightly golden.

10) Cool on baking sheet for 5 minutes before transferring to cooling rack.

Store in an airtight container for up to 3 days.  Cookies are best the day of.
