There’s just something about red velvet desserts that I find romantic. Maybe it is because they remind me of crushed velvet, red satin sheets, red roses…………………………………………
Anyways, back to baking. This recipe uses a cake mix to save time and the results are amazing. Now, I know some of you might not agree with using cake mixes, but for me, they’re great to have on hand when you need or simply want to bake something fast. Let’s be honest, life can be busy and sometimes you just don’t have the time to make a great dessert from scratch.
This recipe only needs 4 ingredients, 1 bowl and 30 minutes of your time, but it will taste like you’ve been slaving in the kitchen all day. These gorgeous cocoa red colour cookies are chocolate-y, chewy and they have a brownie-like texture to them.
So give this recipe a try. You won’t be able to stop thinking about these cookies.
Easy Red Velvet Chocolate Chip Cookies
Ingredients
1 box red velvet cake mix ( I used Duncan Hines)
2 large eggs
1/3 cup vegetable oil
1 cup semi-sweet chocolate chips
Instructions
1) Preheat oven to 350°F and line 2 baking sheets with parchment paper
2) In a large bowl whisk eggs and oil
3) Add cake mix, using a strong rubber spatula, stir until combined and all of the dry cake mix is dissolved (the batter will be thick)
4) Fold in chocolate chips
5) Using a medium cookie scoop or a heaping tablespoon, drop rounded cookie dough 2 inches apart onto the lined baking sheets
6) Bake one sheet at a time for 10 minutes, let cookies cool on baking sheet for 5 minutes before transferring to wire cooling rack
Optional, dust cookies with powdered sugar or make a heart shape stencil out of waxed paper and dust a heart on your cookies.
Store in an airtight container for up to 5 days
